In Bhakti yoga tradition, once every fortnight, we practice a grain-free diet. On one such day, I thought of making something interesting. Well, what could be better than a Pizza was the next thought that crossed my mind and I came up with this grain-free pizza recipe. Enjoy!

2 Persons
Ingredients
For Pizza base:
1 Cup grated cauliflower (squeezed for excess water)
1/2 Cup arrowroot powder
1/2 Cup almond meal
1 Tsp + 1/4 Tsp (for greasing) olive oil
1/2 Tsp salt
1/2 Tsp dried basil
1/2 Tsp dried oregano
1/8 Tsp freshly ground black pepper
For Sauce:
3/4 Cup packed fresh Basil leaves
1/8 Cup pine nuts/walnuts
1 Tsp Lime juice
1/4 Cup olive oil
1/4 Tsp salt
1/4 Tsp freshly ground fennel seeds
1/8 Tsp freshly ground black pepper
For Topping:
1/8 Cup sliced kalamata olives
1 Tablespoon grated fresh mozzarella cheese
1 Tablespoon grated fresh paneer cheese
Method
For Pizza base:
1. Mix all ingredients in a mixing bowl together to make a dough
2. Grease your rolling pin with olive oil and roll the dough to form a circular base of about 8 inch on a parchment paper. (You can use your greased hands and pat the dough to make the circular base)
3. Place the parchment paper with the rolled base onto a pizza tray and bake it for 17 min. at 425F
For Sauce:
Place all ingredients in the food processor and puree to a slightly chunkier consistency
Assembly
1. Spread the sauce on the baked pizza base
2. Top with olives and both the grated cheeses
3. Bake at 425F for another 7 min. until cheese melts
4. Optionally, if you like, broil for another 2 min
5. Garnish with fresh basil leaves and serve hot

Arrow root Powder: It’s a powder obtained by drying and grinding of starch from the rhizomes of several tropical plants, traditionally Maranta Arudinacea. It is used as a thickener in many recipes. Its most special quality that we study in Ayurveda is of being a toxin-binder to usher free flowing toxins out of our body!
Paneer cheese: Is a fresh cheese that can be made at home by adding some lime or buttermilk to the milk that just coming to a boil
